Sprinkle Vegeta Delight over the steaks and let stand in cool place for an hour.
Wash the rocket, drain well and place in a bowl. Add tomato and melon.
Dressing: In a small bowl combine olive oil, Vegeta Delight, garlic, lemon juice and parsley and mix through.
Brush olive oil over heated BBQ plates and fry the steaks, each side 5 minutes.
On serving plates arrange the rocket with rock melon and tomatoes, place the chicken steak on top and sprinkle with pine nuts and dressing.
After cleaning and cutting the melon into small cubes, cool it in refrigerator well, before adding to the rocket salad.
