At times the name of a recipe really doesn’t say much. This “BBQ Chicken” is least of all just another BBQ chicken recipe and more a true gourmet feast.

Ingredients

  • 4+4 chicken drumsticks and thighs
  • 2 tablespoons Vegeta Chicken Stock Powder
  • 2 twigs rosemary
  • 150 ml oil
  • Rice Side Dish:
  • 300 g boiled rice
  • 1 tablespoon Vegeta Gourmet Stock Powder
  • pepper
  • 1 tablespoon parsley chopped
  • 40 g butter
  • 50 g peeled almonds, cut into sticks

Preparation

  1. 1.
Remove the bones from the chicken drumsticks and thighs.
  2. 2.
Sprinkle the meat with Vegeta Chicken Stock Powder, add rosemary twigs and drizzle with oil. Leave this to marinade for at least 30 minutes, but for best results leave over night.
  3. 3.
Prior to cooking the meat, make a small incision on the underside of the meat and thin out gently using a mallet.
  4. 4.
Heat up the BBQ plate and arrange the chicken pieces, skin side down. When they become, crunchy turn over.
  5. 5.
Preparing the rice: Heat up the butter and toast the almonds, add cooked rice, Vegeta Gourmet Stock Powder, pepper and chopped parsley. Heat up and stir.

Serving

Arrange the chicken over the rice and serve with vegetable relish or roasted vegetables.

Tip

The same recipe can also be prepared in a pan as well.
