Toast the bread in hot pan, without oil.
Dribble a few drops of olive oil on each slice and cover to keep warm.
In a bigger pan warm up the left over olive oil, add in tomato slices and sprinkle with Vegeta Gourmet stock. Cook on both sides on mild heat for about a minute or so.
Cover each bread slice with bocconcini cheese and tomato slices. Sprinkle with garlic and garnish with basil leaves.
Serves well with salad or as an entree.
Sprinkling warm bread slices with a pinch of Vegeta Gourmet stock powder prior to adding the topping will make the Bruschetta even tastier.
