In a large deep pan heat up olive oil and fry the chicken pieces until they turn golden brown in colour.
Add the onion and fry for few more minutes.
Cover with cognac, add green pepper, Vegeta Delight stock and simmer on mild heat, covered, for 20 minutes. During the cooking process add little water from time to time, so you keep the juicy sauce.
Serve sprinkled with parsley and cooked tagliatelle pasta.
During the cooking process, continually adding little amounts of water will make the sauce thicker.
