Preparation

Cut cod fillets to medium size pieces, sprinkle with salt, drizzle with lemon juice and coat in flour.

Heat oil in a pan and fry cod, until rosy in colour. While frying, continually turn them.

Heat oil in a pan and fry onion briefly. Add zucchini and braise until it softens.

Add tomato, corn, garlic, Ajvar vegetable relish, salt, pepper and braise covered, on low heat for 10 minutes.

Polenta Side dish: Bring water to boil, add salt, oil and stir in polenta. Cook a few minutes, stirring continually, until polenta thickens and remove from heat. Grease a dish lightly with butter, pour in polenta and let cool.
Serving
On a serving plate arrange braised vegetables and sprinkle with feta cheese. Place slices of polenta and cod over vegetables.
Tip
Ajvar vegetable relish hot will add this dish a slight spicy flavour.
