Preparation

Boil the water and cook the prawns for 5 minutes. Remove from water and let cool.

Place lettuce in a bowl, add mint and basil and gently mix through.

Dressing: In a bowl mix olive oil with lemon rind, lemon juice, chilli and Vegeta Delight stock and stir.

Pour few tablespoons of the dressing over the prawns and let stand for 5 minutes.
Serving
On a serving plate arrange the salad, drizzle over with some dressing, add the prawns and mango and then drizzle with remainder of the dressing, then serve.
