Rice in Coconut Milk

Coconut milk is unavoidable ingredient in preparation of many entrees, main meals and desserts, especially in Malaysian cuisine. As an idea use it to prepare a rice side dish served with Ajvar vegetable relish and anchovy sauce.

Ingredients

  • 400 ml water
  • 400 ml coconut milk
  • ½ tsp salt
  • 300 g long grain rice
  • 1 tbsp oil
  • 4 eggs
  • Sauce
  • 2-3 tbsp oil
  • 1 tbsp onion, sliced thinly
  • 2 garlic cloves, chopped
  • 1-2 anchovy fillets, sliced
  • 1 tbsp soy sauce
  • 200 g Ajvar vegetable relish mild

Preparation

  1. 1.
    In a pan, combine water and coconut milk, add salt, stir and bring to boil.
  2. 2.
    Stir in rice and cook on mild heat for 15 minutes.
  3. 3.
    Sauce: heat up oil and fry onion. Add garlic, anchovies, soy sauce and Ajvar vegetable relish. Stir well and remove from heat.
  4. 4.
    In a pan, heat oil and fry the eggs.

Serving

Serve rice with prepared sauce and eggs.
