Salad with Carrots, Grapes and Walnuts

This salad makes a great side dish or can be a light meal on a hot day. It will fill the need for light and refreshing brunch or dessert.

Ingredients

  • 100 g sultanas
  • 600 g walnut, chopped
  • 60 g margarine spread
  • 500 g carrot, julienne style
  • 1 tsp sugar
  • 1 tbsp Vegeta Delight stock powder
  • 1 cup water
  • 150 g green grapes (seedless)
  • 1 pinch ground pepper

Preparation

  1. 1.
    Place the sultanas in a bowl, cover with hot water and let stand for 20 minutes, then drain. Add the walnuts and mix through.
  2. 2.
    In a pan melt the margarine spread. Add carrots, sugar and Vegeta Delight Stock. Cover with water and simmer until the liquid evaporates (about 10 minutes).

    In a bowl combine carrots, sultanas with walnuts, grapes, add pepper and mix through.

Serving

Serve the salad straight away, while still warm.

Tip

Do not cover the pan, when cooking the carrots.
