Cook the peas in water until soft, then drain. You can also use the canned peas in which case just drain the peas and rinse with water.
Melt the margarine spread in a large pan, add spinach, ginger, lemon rind, cumin, mint and Vegeta Delight stock. Stir through well and finally add 50 ml water. Simmer on mild heat covered for 10 minutes. Just before the end, mix in peas and sherry.
Serve Spinach with peas with mashed potato or with veal steaks.
You can replace the spinach with Swiss chard in this recipe.
